I have to admit…I am pretty proud of the fact that I am finding my inner-cook, if you will. I have not been 100%, but I have been able to get MUCH better at cooking weekly family meals, ME cooking weekly family meals, not Joe. Last night I whipped out the Joy of Cooking cookbook and made something I never thought would be good to begin with. I know I am a MAJOR rookie in the cooking dept, but putting orange juice, mustard, brown sugar and onions together on chicken is unthinkable to me. But it was absolutely delicious.

So here’s another fun recipe for you all to enjoy:
Baked Chicken with Orange Juice -a perfect quick after work dinner-
(you had me at quick)
Preheat oven to 375
Rinse and pat dry: chicken package (we did three breasts)
Smear the skin with:
4 teaspoon Dijon mustard
Arrange the chicken in a shallow roasting pan or baking dish just large enough to hold it in a single layer.
Sprinkle the pieces with:
1/2 cup finely chopped onions
2 tbs butter, cut into bits
salt and ground pepper to taste
Pour around the chicken:
1 1/2 cups orange juice
Bake for 30 mins
Turn the chicken over and sprinkle with:
1/4 cup firmly packed dark brown sugar
Bake until the chicken is tender and golden, 15-20 mins more (I would say only 15 is needed). Add more orange juice if the pan seems dry. Remove the chicken to a serving platter. Pour the juices into a small sauce pan and boil over high heat until syrupy. Spoon the sauce over the chicken and serve.
