4th of July has always had more meaning around my parent’s house growing up being that it is also my dad’s birthday.  OF course he thinks that the fireworks are for him.  Who doesn’t that celebrates a birthday on that day?  Either way it is a great excuse to hang with family or friends and enjoy what makes the USA so freakin’ amazing.  Sports, fruit, fireworks, dogs, denim shorts, I love NY tees and red, white + blue.  So, in honor of all the amazingness that America is we thought we would say Happy 4th Of July through what is becoming to be a classic KHP styled shoot.  And…to make the deal a little sweeter we have two cool bonuses.

3 SUPER AMAZING Popsicle recipes:

Strawberry Vanilla Frozen Pops
1 lb strawberries hulled and halved
½ cup sugar
2 teaspoons lemon juice
2 pints premium vanilla ice cream
Mash the strawberries in a large bowl with a potato masher or a fork. Transfer to a large nonstick skillet along with the sugar and lemon juice and boil over medium heat, stirring occasionally, until slightly thickened, about 10 minutes. Transfer to a bowl and freeze, uncovered, until cold (about 10 minutes).
Transfer the ice cream to a microwave safe bowl and heat at 30 percent power in 10-second intervals, stirring until softened, about 50 seconds total.
Spread even in a 9×13 inch-baking dish and freeze while strawberry mixture chills. Dollop tablespoons of the strawberry mixture all over the ice cream then swirl it gently through the ice cream with a spoon.
Spoon into molds (or paper cups like I did) and add wooden Popsicle sticks. I used the wide craft sticks. I let the pops freeze for about 20 minutes before I put the sticks in. Freeze until firm, about an hour and a half, or up to 4 days covered.

Easy, Creamy, Lemon Dream Popsicles

2/3 cup sugar
5 tablespoons fresh lemon juice
2 tablespoons grated lemon peel
1 pinch salt
1 2/3 cup buttermilk
Whisk sugar, lemon juice, lemon peel, and salt in 4-cup measuring cup until sugar dissolves. Whisk in buttermilk.
Divide mixture among ice pop molds. Cover and freeze until firm, at least 4 hours and up to 5 days

blueberry popsicle
1 cup blueberries
1/4 cup frozen grape juice concentrate, slightly thawed
Make blueberry flavor by pulsing blueberries in a food processor for about 10 seconds, then stirring to combine with the grape juice concentrate. To make lemon flavor, heat water and sugar, stirring, until sugar has dissolved then add zest, bring to a simmer, and remove from heat. Let cool. Pour the sugar mixture through a strainer into the lemon juice, and stir to combine. Pour blueberry flavor into popsicle molds and fill about 1/4 of the way. Freeze (about 30 minutes), then fill another 1/4 with lemon flavor, and continue alternating and freezing until popsicles are ready.
